No Egg Caesar Salad Dressing

We love Caesar dressing but I don't always have eggs on hand for the traditional variety. This is a great substitute.

Its creamy, it has the tang of the anchovies and the bite of fresh garlic. If making it for a romantic dinner, make sure your significant others is on board with garlic.

One recipe where we couldn't find all organic ingredients

Caesar Dressing:

1 tin whole anchovies in oil or 3 Tbs anchovy paste

1 cup full fat sour cream

3 Tbs water

2 Tbs lemon juice

2 Tbs grated Parmigiano-Reggiano Cheese

2 cloves of crushed garlic

3/4 tsp fish sauce

1/2 tsp black pepper

All ingredients in the Pool! I use an immersion blender. A small food processor will work just as well. Throw all ingredients in the blender and process until smooth and creamy.

This recipe packs a bit of a bite from the garlic so, you may want to back off on the garlic if you aren't the big garlic fans.

This dressing was great! I love Caesar dressing but I'm afraid of the raw egg in traditional recipes. Thank you! This will be a staple in our fridge.
